This lovely side dish becomes a good entree if you serve it over cooked noodles.
Heat the oil in a large skillet over medium heat. Add the onion, cabbage, and mushrooms. Sprinkle with salt and pepper. Cover and cook for about 15 minutes, stirring occasionally, until the cabbage is wilted. Add the lemon juice, mint, and chickpeas. Stir to mix. Cook for about 3 minutes, stirring occasionally, until heated through. Taste for seasonings.
