Herbal Vinaigrette Dressing

This dressing is perfect for tossed green salads, pasta salads, and potato or other vegetable salads. It remains ever-popular at Claire’s, thirty-five years later!


  • 1 cup olive oil
  • cup red wine vinegar
  • Juice of 2 lemons
  • Salt, to taste
  • 1 teaspoon black pepper
  • 2 teaspoons each dried basil, oregano, and tarragon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce


Combine all ingredients in a bowl. Whisk well. Taste for seasoning.
