Serve this fresh salsa with baked corn tortilla chips for a great appetizer.


  • 1 small organic zucchini, cut into small dice
  • 3 small organic tomatillos, husk removed and discarded, fruit rinsed and cut into small dice
  • 8-10 organic cherry tomatoes, quartered
  • 1 ripe avocado, seeded and diced
  • 1 tablespoon organic extra-virgin olive oil
  • Juice from ½ organic lemon (about 2 tablespoons)
  • Sea salt and pepper


Combine the ingredients in a bowl. Using either your hands or two spoons, toss gently to combine. Taste for seasonings.
