Tzatziki is a classic Greek dip. I was lucky to grow up next door to a Greek family, who gave me an early exposure to some of the wonderful flavors of their traditional cuisine. This dip is terrific with toasted pita triangles, potato chips, cucumber slices, or slices of boiled potato.

Ingredients

  • 16 ounces (2 cups) plain organic yogurt, Greek or other
  • 4 cloves

Method

  1. Line a colander with a double layer of cheesecloth and set it in a bowl. Spoon the yogurt into the lined colander. Cover with plastic wrap and refrigerate for 1-2 hours, until slightly thickened.
  2. Turn into a bowl. Stir in the garlic, cucumber, flax oil, salt, and pepper. Mix to combine well. Taste for seasonings.
