Marinara Sauce I

There’s nothing quite like a simple marinara. The delightful aroma will fill your kitchen, tempting all who enter. This wonderful sauce is quick and easy to make, requiring only staple ingredients and allowing you to offer last-minute dinner invitations to your friends. Invite them back to the house after a day at the beach or an evening of theater. Put your water for pasta on to boil while you prepare this delicious sauce and make a simple salad, and within the hour you and some very grateful friends will be enjoying a lovely meal.

Ingredients

  • ½ cup olive oil
  • 6 large cloves garlic, minced
  • 2 28-ounce cans whole peeled San Marzano tomatoes
  • ½ cup chopped fresh basil
  • 1 teaspoon crushed red pepper flakes
  • Salt, to taste
  • Black pepper, to taste

Method

Heat the oil in a large skillet over low heat. Add the garlic and cook for 3 minutes, stirring frequently, until golden brown. Do not let the garlic burn or your sauce will be bitter. Add the tomatoes and raise the heat to medium. Simmer for 10 minutes, stirring often. Using a spoon, break up the tomatoes into small pieces. Add the basil, red pepper flakes, salt, and pepper. Simmer, stirring frequently, for another 15-20 minutes, until the sauce is thick. Taste for seasonings.
