Basil-Scented Marinara Sauce

I enjoy a good marinara sauce more than any other, and this one is perfect for fettucine.

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 6 large cloves garlic, cut into thick slices
  • 1 small yellow onion, finely chopped
  • 1 35-ounce can Italian whole peeled tomatoes in juice, crushed by hand
  • ½ cup dry red wine
  • 10 large fresh basil leaves
  • ¼ cup coarsely chopped Italian flat-leaf parsley
  • 2 bay leaves
  • Salt and pepper

Method

Heat the oil in a large pot over medium heat. Add the garlic and onion. Cover and cook, stirring occasionally, for 7-10 minutes, or until the garlic and onion are light brown but not burned. Add the remaining ingredients and stir well to mix. Cover and bring to a medium boil (this should take about 5 minutes), stirring occasionally. Cook for about 20 minutes, or until the sauce reduces slightly. Taste for seasonings.
