This quick sauce is perfect for the summer months. Use ripe plum tomatoes to make a delicious sauce for pasta, pizza, or rice.


  • 3 tablespoons extra-virgin olive oil
  • 4 large cloves garlic, cut into thin slices
  • 1 medium red onion, finely chopped
  • 24 ripe plum tomatoes, coarsely chopped, including juices
  • 3 tablespoons finely chopped Italian flat-leaf parsley
  • 5 large fresh basil leaves, coarsely chopped
  • 5 medium fresh sage leaves, finely chopped, or 1 teaspoon dried sage
  • 3 tablespoons dry white wine
  • Salt and pepper, to taste


Heat the oil in a large skillet over medium-high heat. Add the remaining ingredients and stir to mix. Cover and bring to a medium boil, then lower the heat to medium and cook, stirring occasionally, for about 20 minutes, or until the sauce reduces by about half. Taste for seasonings.
