Tear the bread into small pieces and place in a mixing bowl. Add the ground soy beef and the parsley, onion, garlic, bell pepper, meatless bacon, 1tablespoon of the olive oil, and alittle salt and pepper. Using your hands, mix the ingredients until well combined. Taste for seasoning. Add the egg and mix well to combine. Form into 4 burgers.
Heat a large skillet over medium-low heat. Add the remaining tablespoon of olive oil and swirl it around the skillet to cover the bottom. Arrange the burgers in a single layer in the heated oil. Cover and cook for about 8 minutes, or until the undersides are well browned but not burned. Turn the burgers, cover, and cook for about 5 minutes, or until the burgers are well browned but not burned.
