This recipe is vegetarian but can easily be made vegan by replacing the dairy egg with a vegan egg substitute. Serve on your favorite burger bun.


  • 3 slices whole wheat bread
  • 1 14-ounce package meatless ground soy beef (found in the refrigerated produce section at the supermarket)
  • ¼ cup chopped organic Italian flat-leaf parsley
  • ¼ small organic onion, finely chopped
  • 2 cloves organic garlic, finely chopped
  • 1 small organic red bell pepper, finely chopped
  • 2 strips meatless bacon, finely chopped
  • 2 tablespoons extra-virgin olive oil, divided
  • Salt and pepper, to taste
  • 1 organic egg or equivalent egg substitute
  • 4 hamburger rolls


    1. Tear the bread into small pieces and place in a mixing bowl. Add the ground soy beef and the parsley, onion, garlic, bell pepper, meatless bacon, 1 tablespoon of the olive oil, and a little salt and pepper. Using your hands, mix the ingredients until well combined. Taste for seasoning. Add the egg and mix well to combine. Form into 4 burgers.
    2. Heat a large skillet over medium-low heat. Add the remaining tablespoon of olive oil and swirl it around the skillet to cover the bottom. Arrange the burgers in a single layer in the heated oil. Cover and cook for about 8 minutes, or until the undersides are well browned but not burned. Turn the burgers, cover, and cook for about 5 minutes, or until the burgers are well browned but not burned.
