This recipe is vegetarian but can easily be made vegan by replacing the dairy egg with a vegan egg substitute. Serve on your favorite burger bun.
3sliceswhole wheat bread
1 14-ouncepackage meatless ground soy beef (found in the refrigerated produce section at the supermarket)
¼cup chopped organic Italian flat-leaf parsley
¼ small organic onion, finely chopped
2clovesorganic garlic, finely chopped
1 small organic red bell pepper, finely chopped
2strips meatless bacon, finely chopped
2tablespoonsextra-virgin olive oil, divided
Salt and pepper, to taste
1organic egg or equivalent egg substitute
Tear the bread into small pieces and place in a mixing bowl. Add the ground soy beef and the parsley, onion, garlic, bell pepper, meatless bacon, 1tablespoon of the olive oil, and alittle salt and pepper. Using your hands, mix the ingredients until well combined. Taste for seasoning. Add the egg and mix well to combine. Form into 4 burgers.
Heat a large skillet over medium-low heat. Add the remaining tablespoon of olive oil and swirl it around the skillet to cover the bottom. Arrange the burgers in a single layer in the heated oil. Cover and cook for about 8 minutes, or until the undersides are well browned but not burned. Turn the burgers, cover, and cook for about 5 minutes, or until the burgers are well browned but not burned.
