This fall-flavored frosting is terrific any time of year.


  • ½ cup trans fat-free shortening
  • 3 tablespoons trans fat-free margarine or spread
  • 2 cups confectioners’ sugar, measured and then sifted
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons local apple cider
  • ¼ cup organic dairy milk or organic plain soy milk


Measure the shortening and the margarine into a mixing bowl. Using a hand mixer set on medium speed, cream this mixture for about 30 seconds, stopping once or twice to scrape the bowl. Add the remaining ingredients. Using a hand mixer set on low speed, beat this for about a minute, stopping once or twice to scrape the bowl. Raise the speed to medium-high and beat for an additional 2-3 minutes, until light and fluffy, stopping a few times to scrape the bowl.
