Rich and Fluffy Chocolate Caramel Frosting

Sometimes we put this frosting into a pastry bag and pipe it into cupcakes for a nice little surprise for our beloved customers.

Ingredients

  • ½ cup trans fat-free shortening
  • 3 tablespoons trans fat-free margarine or buttery spread (I like to use Earth Balance® brand)
  • 2 cups confectioners’ sugar, sifted after you measure it
  • 1 cup cocoa powder, sifted after you measure it
  • 1 teaspoon chocolate extract
  • 2 tablespoons caramel flavor shot
  • â…“ cup organic dairy milk or organic plain soy milk

Method

Measure the shortening and the margarine into a mixing bowl. Using a hand mixer set on medium speed, cream this mixture for about 30 seconds, stopping once or twice to scrape the bowl. Add the remaining ingredients. Using a hand mixer set on low speed, beat this for about a minute, stopping once or twice to scrape the bowl. Raise the speed to medium-high and beat for an additional 2-3 minutes, until light and fluffy, stopping a few times to scrape the bowl.
