  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion
  • ½ medium green bell pepper

Method

Prep the veggies

Heat the oil in a large nonstick skillet over medium-high heat, 2 minutes. While the oil heats, finely dice the onion and pepper. Add the vegetables to the skillet with a pinch of salt and stir until coated with oil. Reduce the heat to medium, cover, and cook, until the veggies are very soft, about 7 minutes. While the veggies cook, peel an
