  • 1 clove garlic
  • 2 tablespoons red wine vinegar grated zest and juice of 1

Method

Smash and peel the garlic clove and place it in a pint-size Mason jar. Add the vinegar, lemon zest, lemon juice, oregano, sugar, salt, and pepper. Whirl with a stick blender until puréed and a little frothy, then with the blender running inside the jar, add the oil and blend until smooth.
