YKHYCDT: ground chicken or lamb

  • 4 slices nitrate-free bacon
  • 4 scallions
  • 4 medjool date

Method

Cut the bacon crosswise into ¼-inch-wide pieces. Place the chopped bacon in a large, cold, nonstick skillet, turn the heat to medium-high, and fry the bacon until it’s crisp, 3–4 minutes. While it cooks, thinly slice the scallions; pit and slice the dates. Remove the bacon from the pan and drain it on paper towels.
