For what appears to be a simple salad, tabbouleh presents a few challenges. There’s the ratio of lemon juice to olive oil to consider, radishes or no, curly vs. flat-leaf parsley, and to spice or not to spice. These are the questions! I opted for a slightly tart dressing with a lovely olive oil slinkiness. No radishes (too muddy). Curly parsley because that’s what we always used in our kitchen when I was a kid. And yes, yes, yes! to spices. I always say yes to spices.
