Method

Put in a saucepan two pints of water a large onion and one carrot cut in small pieces, a little parsley, one bay leaf, salt, coarsely broken pepper and a glass of vinegar (or two of dry white wine). Bring to the boil and cook about twenty minutes. To be used for the boiling of fish.
