Method

It is easy, at the right time, to prepare a stock of salad vinegar flavoured with the spring herbs which are sometimes unobtainable in London during the winter months. Put in a glazed earthenware pot two handfuls of tarragon, one of chervil and mustard and cress mixed, one clove of garlic. Pour over this three bottles of wine vinegar, either red or white, cover the pot, let the mixture infuse eight to ten days; then decant it and rebottle.
