Method

Take some chestnuts and boil them for a few minutes; then take them out, remove both skins and put them back in the saucepan; cook till they are tender. Mash them well, flavour with vanilla, add a little sugar, and a glass of cream. Cook again on a slow fire till the mixture is quite dry, when you press it through a colander with fairly large holes directly into the serving dish. Let it grow cold, and serve covered with whipped cream, also flavoured, if you like, with vanilla.
