Fry in butter a few onions thinly sliced; when brown add hot water, salt and lots of pepper, bring to the boil and let it reduce by a quarter. Meanwhile dry in the oven thin slices of French bread. Put the onion soup in a bowl (one for each person), add two or three slices of bread, sprinkle with grated cheese and brown in a quick oven.
