Method

Having cooked the beetroots slowly in the oven, skin them and cut them in slices. Put them in a saucepan with butter, chopped parsley and chives, a tiny piece of garlic, a pinch of flour, salt, pepper, and very little vinegar. Bring to the boil and cook them for about a quarter of an hour.
