Method

Cut and prepare the cabbage, put it in a saucepan with enough water to cover it, add several eating apples cut in small pieces, salt, pepper, a little piece of butter and two cloves. Cook for two hours and a half with the lid on, on a slow fire, stirring occasionally. When it is nearly ready bind it with very little potato flour, mix it with a little wine vinegar and add a tablespoonful of red currant jelly. Stir it in well, cook a few minutes more and serve.
