Method

It can be served hot or icy cold; in cups always. Take the required quantity of cold consommé, allowing for reduction and allow to each person one tomato and a spoonful of lean raw beef (it is essential that there should be no fat at all) mixed finely. Put all the mixed beef in the cold consommé together with one (or two if for six or eight people) white of egg well beaten and the tomatoes cut in small pieces; bring to the boil stirring occasionally and let it simmer for at least one hour and a half. Strain it carefully through a strainer and a muslin.
