Method

Peel six bananas and put them in a fireproof dish. Sprinkle over them three tablespoonfuls of Demerara sugar, squeeze the juice of a lemon and add three tablespoonfuls of water. Bake brown in a slow oven and half-way through the baking add a sherry-glassful of Jamaica rum. Serve with cream, whipped and flavoured with either rum or lemon.
