Method

This can be prepared in two ways.

(1) Take some very young and small globe artichokes, remove the outside leaves, cut them in eight quarters, and fry them in oil till soft. Dispose them round the omelette in the serving dish.

(2) Take some artichokes, remove all leaves and use only the bottom. Boil them in salt water (they should remain quite firm), then cut them in small cubes, toss them in butter and add to the beaten eggs.

The omelette in both cases to be made in the ordinary way.
