Method

Take a quarter of a pound of Roquefort cheese, mix it with about the same quantity of butter, pour in one liqueur-glassful of Calvados (apple brandy) or Armagnac, and see that the mixture is smooth and homogenous. Spread it on pieces of dry toast or on slices of stale brown bread.
