Method

Take about one pound of salt cod, as white and nice as possible, soak it in fresh water for twenty-four hours, changing the water occasionally; then cut it in pieces and put these in a saucepan with cold water. Bring to the boil and keep boiling about six minutes. Remove it, drain it well and break it in small pieces.

Put in a thick saucepan two tablespoonfuls of olive oil, two or three pieces of garlic and parsley chopped together finely; when the oil is hot put in the pieces of cod and start pounding, whipping, stirring vigorously and continuously, adding alternately olive oil and hot milk till you obtain a light, smooth creamy purée. Finish, if you like, by the addition of a little cream, see that it is well seasoned and serve at once, very hot with fried croûtons.
