Method

Have ready some thin French pancakes made without sugar and a cooked lobster. Cut the cooked lobster in small pieces, toss these for a minute or two in butter and paprika.

Meanwhile prepare a Béchamel sauce, to which you add a pinch of paprika and a spoonful of tomato purée. Mix this with the pieces of lobster, and stuff each pancake with the mixture. Dispose the rolled pancakes in a fireproof dish, and pour over a sauce made as follows:

Cook in butter fresh mushrooms cut in slices, thin pieces of fresh tomatoes, to which you add the sliced truffle, seasoning, the red part of the lobster and a little brandy; mix well, chop finely, and bind with a little fresh cream. Cook for a few seconds, pour over the stuffed pancakes, and serve.
