Method

Boil in their skins some yellow potatoes, peel them and let them get almost cold; cut them in thin slices and toss them in a pan with very hot butter; add salt and pepper. When they are beginning to colour add one or two onions finely cut and finish the cooking. The pieces of potatoes and the onions (three parts potatoes, one part onion) should have the same golden brown colour.
