Method

Take some peaches, poach them for one or two minutes in hot water, so as to peel them easily. Put them in a copper pan over a spirit lamp with a glass of kirschwasser. Prick them here and there with a fork. When the spirit is hot it will start burning. Let it burn, and, shaking the pan, add a little castor sugar; serve at once.
