Method

Is a very pleasant salad for hot weather: take a bundle of watercress, clean it well and use only the top part and the nice small leaves; peel half a cucumber and cut it in very thin slices, and also cut thinly a dozen spring onions. Dress plainly with salt, pepper, wine, vinegar, and olive oil.
