Method

Take some asparagus tips as long as possible; cook them as forasparagus en petits pois; remove them when cooked, and put them in cold water for a little time. Drain them well, and see that they are quite dry. Roll them lightly in flour, and make little bunches of five or six tied with thread. Dip these bunches in beaten egg, and fry them as you would any fritter.
