Method

Cook some beetroot in the oven in the ordinary way, peel them, cut them in slices and put them in a saucepan with a good piece of butter, salt and pepper, parsley and chervil finely chopped. Cook slowly about a quarter of an hour, add a pinch of flour, stir well, then a glass of milk, bring to the boil, cook another ten minutes, stirring often, add a little piece of butter at the last minute and serve. The sauce should be well reduced and highly seasoned.
