Method

Cut four tomatoes in quarters, remove the seeds, put the quarters in a small saucepan with one carrot and one onion finely chopped, salt and pepper; cover with water and bring to the boil; cook it well, then squeeze through a muslin. Add a brown roux—a little stock a drop of wine vinegar and cook again, whipping well, to proper consistency. Add a few small pieces of butter at the last minute. Should be fairly thick.
