Method

Put the broad beans cooked as described in the above recipe, in a saucepan with a good piece of butter, sprinkle in a pinch of flour, stir well, then add one lump of sugar, grated nutmeg, a small quantity of hot milk, pepper, and salt, cook for a few minutes and bind at the last minute with the yolk of two eggs.

Broad beans are also very good with a maître d’hôtel sauce.
