Method

Turnip tops make an excellent vegetable dish. Take the required quantity, using only the perfectly sound leaves, and wash them well. Put them in boiling salted water and cook them. When ready drain them well in a colander, pressing them with a cloth; they should be quite dry. They can be served either chopped coarsely, with a good piece of butter, which should be just melted, or squashed through a sieve as a purée, like spinach, with the addition of butter and cream.
