A very simple galette: take a certain quantity of fresh cream, work in smoothly as much flour as it will absorb to make a fairly stiff batter, flavour with essence of orange or lemon, add sugar. Make a galette about half an inch thick, sprinkle over it coarse sugar, bake in a quick oven. The result is, or ought to be, a kind of blistered galette and very light.
