Method

Take six fonds d’artichauts already boiled and cold, cut them in quarters and cook them in butter with parsley and chervil chopped; add, when they are hot, a pound of French beans (carefully drained), mix well but lightly, toss over the fire, add one or two more pieces of fresh butter, see that it is well seasoned, put in the serving dish and sprinkle over the yolks of two hot hard-boiled eggs, finely chopped.
