Method

Take whatever meat is left out of a roasted chicken or of a poached one as the case may be, cut in small cubes and toss these lightly in butter, season and sprinkle with paprika. Do the same to a few fresh mushrooms; mix together mushrooms and pieces of chicken, add a little cream, just enough to moisten the mixture, and keep it hot.

Prepare a good Béchamel sauce and a few thin pancakes (omitting the small quantity of sugar which is usually put in the batter). Place on each pancake some of the mixture, roll it, and arrange all the pancakes in a long fireproof dish. Add a yolk of egg to the Béchamel sauce, mix well, pour over the pancakes, sprinkle a little grated cheese, and brown quickly in a salamander or under the grill. Serve at once.
