Method

Whip to a stiff froth the white of one egg, add to it half a pint of fresh cream and go on whipping till the mixture is like a mousse. Squash through a hair sieve a handful of raspberries, mix the purée obtained with fine castor sugar (enough to sweeten both the cream and the fruit). Add this lightly, together with a few whole raspberries, to the whipped cream, keep on ice for half an hour and serve.
