Method

Take one pound and a half of strawberries, put aside about a pound of the best, remove the stalks, pass the other half pound through a hair sieve, mix the purée obtained with fine castor sugar and dilute it with the juice of two oranges. Put the purée in a serving dish, dispose the strawberries over it, sprinkle with castor sugar and serve very cold.
