Method

Take two aubergines, peel them and cut them in slices and fry them either in bacon fat or in butter. Also peel and cut in quarters six tomatoes, remove the seeds and cook them in the same fat you have used for the aubergines. Pass through a fine mincing machine one pound of lean mutton, season well with pepper, salt, spices, add two shallots and parsley chopped together. Take a terrine or any deep fireproof dish, butter it well and put in alternate layers of minced mutton and aubergines and tomatoes till the dish is full. Cover with a buttered paper and cook au bain-marie in a moderate oven for about forty minutes. Serve with it if you like a tomato sauce made with fresh tomatoes.
