Method

Take some fillets of sole, cut them in five or six pieces, dry them well in a cloth sprinkled with flour, and toss them in butter for a few minutes. Cut in small cubes a few potatoes and fry them in butter; do the same to the bottoms of globe artichokes, cut in four pieces. All these should be cooked in different pans, as they would not be cooked properly all at the same time. Then mix them together and finish them well seasoned, with melted butter and lemon juice.
