Method

This is a very old recipe for potted fish. Mince together finely the flesh of one eel and of one carp; mix with it a slice of stale bread soaked in milk, fines herbes, a few chopped mushrooms, salt, pepper, and moisten with a little fresh cream. See that it is quite smooth and cook in a slow oven in a fireproof dish.
