Method

Sweet potatoes can be dressed in many different ways—fried, baked, boiled, also in fritters. They are also very good, au caramel. You boil the potatoes, then cut them lengthway in halves; fry them in butter, and while frying sprinkle them with sugar, which, melting and mixing with the butter, forms a kind of caramel. This is served apparently as a “sweet entrée.”
