Method

Cut in small pieces two or three leeks and brown them in butter; add, then, a few potatoes, toss them one or two minutes, add hot water, salt and pepper and bring to the boil. Cook for about one hour, after which you add a tablespoonful of cream or a glass of milk. Squash the potato coarsely with a fork and stir well before serving. You can also squash them through a sieve and bind with the yolk of an egg if you want the soup more elaborate. Throw in before serving a little plucked chervil.
