Method

Put on the pastry-board half a pound of flour, make a batter with half a pound of grated Gruyère cheese, mix well; add then six eggs, one by one, and mix well till the batter is perfectly smooth. Flatten it on a buttered paper to the shape of a galette about one inch thick, paint the top with yolk of egg and bake in a moderate oven for about an hour.
