Method

Remove the fat from some boiled beef, cut the meat in small pieces, add a few sliced tomatoes, a few boiled potatoes, chopped parsley, spring onions and chervil. Dress with plain oil and vinegar, salt and pepper. This beef salad may be varied in all sorts of ways by the addition of other things : chopped gherkins, celery, fillets of herring or of anchovy.
