Method

Crush and rub through a sieve a handful of leaves of borage (or, if preferred, spinach). Mix with flour, one egg, a drop of oil, and a little tepid salt water; knead it into a stiff paste. Roll it out very thin and cut it into large pieces. Cook these in the ordinary way and put them in layers into a baking dish alternately with pieces of chicken livers and veal, chopped small, and โ€œsugoโ€ or โ€œjus, โ€ also a little grated cheese. Bake in the oven and serve.
