Method

Take a leg of mutton, insert near the bone a head of garlic, rub it well with butter, sprinkle with pepper and bake in the ordinary way, basting often.

The haricot beans have been soaking for twelve hours; cook them in lots of water, salt, pepper, a bouquet and an onion, till tender, adding water if necessary. Put in another large saucepan a good piece of butter, then one shallot finely chopped, the onion from the haricot beans and one tomato cut in quarters. See that all this is reduced to a pulp, then add the gravy from the leg of mutton, the haricot beans carefully drained; and mix well.

Put the leg of mutton in a large fireproof dish, the haricot beans all round it and finish the whole thing by five minutes in the oven.
