Method

Fines herbes for papillotes should be prepared as follows: chop very very finely three rashers of streaky bacon, four mushrooms, and cook these a few minutes in a small saucepan with butter; a few minutes later add two or three shallots also finely chopped, cook two minutes more and add a tablespoonful of chopped parsley, salt, pepper, spices and grated nutmeg. Mix well. Your fines herbes are ready for your papillotes, you can, if you like, add a little tomato purée to the preparation.
