Method

Boil the potatoes in salt water; when cooked peel them and mash them through a fine sieve. Mix them with equal quantity of flour, see that the mixture is smooth, and make it into strips which you pinch into pieces about the size of a broad bean. These you cook in lots of boiling salted water; when done, take them out, drain them well, and serve them with a sauce made with fresh sweet basil, chopped and crushed in a mortar with a little Parmesan, garlic, oil, and butter. Mix the sauce well with the very hot gnocchi and serve at once well seasoned.
